Yamahai, is the traditional (pre WW2) method of making the saké starter, that develops wild yeasts and natural lactic acid that makes for a great balance of complex flavours. Muroka Nama Genshu means unfiltered, undiluted and raw. It's saké as it is straight from the press! This is a Nama (raw) and by definition is young, however I feel this has the freshness and that slight pizzazz of a young nama sake, but it also has some depth and breadth of body of a much more mature sake, there is a slight bitter astringent finish, but for me that’s the sign of a sake that will grow up into something great! .
